Vegetarian No Meat Burgers!!!… and other yummies from the past few days!

Today I tried something new… while I had a beef burger…. oh so yummy, I tried out a special recipe for my mom and her vegetarian friend…. no-meat burgers for them using Beyond Meat product! I prefer Yves non-meats but couldn’t find any at Whole Foods today :[ Bummer.

For 2 Burger Patties:
1 bag of Beyond Beef Beefy Crumbles

1/4-1/2 onion
A few cloves of garlic
Paprika
Salt
Black Pepper
Dried Basil (fresh is probably better and if so, minced)
2 eggs
flour

I first sautéed the minced onion and garlic til caramelized and starting to be transparent and browned slightly. I mixed it with the beefy crumbles. Added S&P, paprika, dried basil and perhaps a few more secret ingredients. I added two eggs and a few pinches of flour to help it bind better – I probably should have added more flour since it was a little too wet. And I grilled them.

For toppings I sautéed onions and mushrooms. Topped the patties with cheese as they were about to be done cooking and put a lid on the pan to melt the cheese. I added a few slices of rings of red onion, sliced tomatoes and some avocado. Some other options (which I put on my beef burger) were jalapeños and cilantro.

And to make the dinner even better.. some kale chips… just kale… drizzled in evoo, s&p I added cayenne pepper… or whatever flavorings you want :]

Sorry, being “healthy”… even tho the burger was rare *MAD COW DISEASE* haha but I ate my in lettuce wrap….”sort of” ok some of it with fork and knife….

More stuff I made this weekend..

Vegetarian Soup… there’s kale, corn, leeks, mushrooms, onion etc etc… topped with some cheese and cilantro and a “garlic bread” croissant

Duck Confit with Leek/Mushroom Risotto and Spicy Broccoli

Just used a tiny bit of white truffle butter, topped with parm and scallions in the risotto, had fresh white truffles.. but forgot to top it… duck confit cooked in lots of duck fat for awhile so super crispy… and then just steamed broccoli with hot pepper flakes :]

Actually ended up taking short ribs and cheese home.. OK FINE I ordered too much… but it was delicious, fun and amazing. Probably don’t wanna spend that much on a July 4th again tho… hahahha – and we didn’t even get fireworks. BOOOOO…

Dim Sum at 新葡苑 – Cantonese Style

Was ridiculously hungry today… I slept in til super late…. so by the time I was up it was tea time….. which is usually between 2-4 in Taiwan… instead of going to one of my go-to places to eat… I decided to finally try out the Cantonese restaurant I’ve been wanting to try for awhile and just never went to… 新葡苑…. while the waitresses all had stinky faces and meh attitudes… the food was freshly made/steamed…. it took awhile for each dish to come out but it was definitely worth it. If you’re into small dishes and trying lots of different things, this is the place to go.  Don’t expect HUGE portions… but expect fresh, hot and yummy!

Delicious “health” tea.. which had goji, jujubes and lots of different asian herbs… naturally sweet and just delicious.

I’m hungry, please feed me…. waiting for the food was SOOOOOO frustrating because it WAS slow… but, like I said, it was worth it.

叉燒酥 which is basically.. .Char Siu Sou…. Flakey Buttery Pastry with Char Siu Pork inside…. this was the only thing I wasn’t really into… I’m not into Char Siu… and I thought the outside was too buttery for a savory dish…

Squid Ink Dumplings… this was amazing… Seafood innards and just the most delicious thin squid ink wrapper… NOM NOM NOM

Boy Choy and Mushroom, Veggie Dumplings. This was actually my favorite of the meal.

Leek Pan Fried er… bun/thing.. uhhh yumminess?!… needed  more leek/onion taste.. but the skin was crispy and delicious… the filling needed a little more ooomph

Fried Shrimp Roll… we actually ordered a steamed one but they got it wrong and gave us this instead… so we kept it, ate it and re-ordered what we wanted. I’m not a huge fried food fan, so good but not a favorite.  But that’s just personal preference.

Pork Ribs.  Sadly, while it was good, there was little meat and mostly bone :[ Sad. I LOOOOOOVE Pork Ribs at dim sum…. they need to give more, and actually give ribs WITH meat.

Chicken Feet. My favorite Dim Sum item.  It wasn’t greasy like a lot of other places.. had a nice black bean taste to it… not spicy  and just yummy. I can eat tons and tons of chicken feet for ages.

Trotters…. aka Pigs Feet… the same thing as with the Pork Ribs… a lot of bone, not a lot of meat… but I did get some good skin.. and some meat.. so it wasn’t too sad… it was a bit too sweet for my taste and it was on a bed of boiled peanuts.  I did love the addition of cilantro… I LOVE CILANTRO… it really enhanced the flavor of the pork feet…. just wish there was more meat/skin to it than just bone.

This is the steamed vegetarian tofu skin roll that they got the order wrong of before…. I had a better pic but I’m too lazy to re-upload.  This always reminds me of my dad cuz it’s his favorite dim sum dish :]

After a nice walk…. I went to my fav place for boozy coffee drinks… Cafe Kitchen… got a Rum Coffee and a Jameson Whiskey Coffee…

老王客家莊 for the best 土雞 [Wild Chicken]

One fine day….. a Friday to be exact, my two aunts, mommy and auntie’s bf decided to go out for a nice lunch in Taichung… and where did we go? After much debate and we were about to go to a Japanese resto for omakase…

YEP!!! We went here. Tradition.  One of my favorite restaurants [aside from the Goose Mama] in Taichung 老王客家莊 where they have the most amazing wild chicken [土 雞] which is basically range-free organic wild Taiwanese chicken :] It’s SOOO good tho…

來自高雄縣美濃鎮的老闆,一開始是以經營麵攤起家,於民國81年選擇在五權五街開設了「老王客家莊」。 餐廳最特別之處是沒有菜單!因為魚鮮是每日船家現釣之新鮮漁獲,老闆以當日食材為基礎,將更新菜色寫在白板上讓消費者點餐。本餐廳招牌菜之一「蝦仔ㄍㄟˇ煎蛋」,是老闆參考早期窮困人家以鹽漬方式保存魚蝦 的美味,運用此法將來自草屯山區的小蝦經醃漬過後再加入蛋汁做成,非常香嫩可口,另外還有炒粄條、白斬雞、苦瓜鹹蛋及熱炒粉腸也都是「老王客家莊」的熱門菜色,其中熱炒粉腸是將粉腸以小火慢煎至噴香,配上餐廳內自助取用的白飯,美味好吃且份量十足喔![source]

I love this place and always come at least LEAST LEAST once everytime I’m in Taiwan :D NOM NOM NOM.. I live and die for their chicken!!!! The only downfall FAIL?! They actually make you pay for a bowl of rice, even if you don’t eat it, they just count per person. Good thing I’m a fatass.

They’re also inconsistent with prices and sometimes try to cheat people on prices. I mean the food is amazing, but come on… also if they’re full they’ll lock you out and not let you wait to come in… and if you’re inside they’ll rush you to kick you out if they’re having a rush. *sigh* But still, can’t help but love their food…. good thing for freshness…

You have to ask ahead for their chicken cuz they only sell as many as they have that day. Fresh = BEST!

We were sitting around looking at the menus when this delicious and creamy concoction came to us… smooth rich chickpeas emulsified into the creamiest I’ve ever had… with the surprising crunch of the pickled melon with a drizzle of fruity evoo on top.


The best bread and butter I’ve ever had… I literally ate more than 20 pieces of this… apparently NO one has eaten this much bread and butter before and they ended up serving us huge baskets – instead of pails of it :]

So I like Greek/Med food but it’s been awhile… I used to eat it all the time when I worked at Directory M since a ton of my coworkers were from that region… and there was an amazing Med place right by work… but I’m lame and always got the Chicken Shwarma.. (so loves it) since it came with amazing rice with tiny pieces of noodles, the sauce.. and just delicious chicken. I’ve had a falafel ONCE in my life and it was there and I wasn’t impressed.. it made me hesitant to ever eat it again.. until now…

Boyfriend LOVES this place.. and I trust him. So I go along with it. He used to come here all the time.. trekking thru rain and snow… and he has good stories about the place and people there. So I enjoy listening as we walk and eat there :]

To start… we had the Baba Ghanouj, Boorek, & Medames, as appetizers…. I LOVE the rice with sweet carrots and raisins that the dishes come with. YUM! They also give you soup or salad (we got the delicious lentil soup) and pickled jalapeno, beets, onions, etc… to munch on… and of course pita!!!

Monday, 11/17 —

So after my Soulmate Oatmeal I wanted something refreshing and I waited awhile for dinner so I had a guava!!!


I chugged as much water as possible the whole day… I’ve been feeling UUBER bloated lately :[ & constantly dehydrated…

Dinner was very GREEN!!!

I still felt munchy so I had a super old Rice Krispy Treat, it was a little stale :[ But I’m a fatty and ate it anyways…


And then I finished up my two jars……. yea… scraped them clean @_@ Remember, I’m a fatty ;]

Tuesday, 11/18 —

I was SOO excited about this GREEN POMELO cuz at Russo’s they called it a RUBY POMELO. It was the same inside as my regular ones except it was SMALLER and less sweet.. WTF!! BOOOO!!!


I was sad but the guava made me happy again :]

Wednesday, 11/19 —

I had some freshly made barley, chinese green beans & jujubes for breakfast


It was super yummy, as usual, so I had another bowl!!!

I had my SECOND Iron IV session. They took a few tubes of blood first and then told me that I was improving. My blood volume went from 24% to 27%. The doctor also asked me if I ate. I thought that was funny.

It was brimming and super heavy. The WF here is SO much better than the one near me. PLUS I love their salad bar more.

I ate there (I love their little tables) and had some yummie green/black/white tea blened.

I came home to surprise cookies from mommy from Sel De La Terre!!

And I finished off my gingerlicious Indigo Rabbit cookies…


They were sold to me expired :[ LAME. I didn’t realize this til after… But they were still soft and fluffy!!!

And then it got messy. I had a pack of dried mango.. two little boxes of chocolate and vanilla animal crackers, some taro chips and then like a WHOLE tub of lightly salted peanuts. @_@ OMG. Binge much?!?! I duno what came over me.

Thursday, 11/20 —

I woke up this morning terrified to get on the scale… but phew, I lost some bloat from the past week, back down to 106… I still feel uuber pudgey tho. I haven’t been under 105/106 in like two months :[

I had a mango for… “brunch” cuz my stomach was upset from all the junk last nite.

And later after work I took some fresh air :] Got a nice big venti Americano from Starbucks (w/ cinnamon and nutmeg)

Got some free fudge – PB/Choc and a Praline at a quick stop @ Costco (and I got some books and WALL-E!!!)

All I wanted for dinner was OATMEAL!!!

1/2c Oats
1 1/4c Water
1 Package of Blueberries
1 Honeycrisp Apple
2 tbs WheatGerm
1 tbs Flax
1/4c Wheatberries
Tahitian Vanilla
TONS of cinnamon
Dash of nutmeg


And the remaining HUUUUUUUUUUUUUUGE amount of my Soyogurt, it’s okay tho because yesterday when I went to the only WF that carries my fav brand of soy yogurt (Wildwood) to get dinner I bought another tub!!!

Health Update & then some…

Today was THE day. Yes, THE day that I went to the Hematologist. I got tons of vials of blood taken, weight (eep! I had JUST eaten SOOO much food and drank so much @_@ argh! I hate getting my weight taken IN clothes AFTER eating/drinking… blah), blood pressure, temp, the works…

Doctor: So you’re a little bit anemic…
Me: Yes…
Doctor: Do you eat well?… Do you bleed?…

[ the usual talk and she glances at the test results from my blood … she did ask me if I had rectal bleeding and I giggled cuz I’m 3.]

*glances at test results*
Doctor: Well you’re SEVERELY anemic. You have pretty much NO iron in your body, you could need a blood transfer if it gets worse… you have a less blood count today than you did two weeks ago… you should eat red meat.
Me: …
Mom: *freaks out*

Ok, that’s not the REAL convo word for word but I’m still woozy from getting my blood taken out.

Jim: poor little tiffie being vampired :(
Me: it’s SO dumb, i need blood but they keep TAKING it

But that pretty much sums it up for ya’ll. There’s also a chance it could be Thalassemia Minor (there’s a good chance cuz I’m Asian!) I’m starting my Iron IV sessions tomorrow (which will be two hours long) and the ones following (up to 4-6, depending) will be about an hour.

GREAT. Me + Hospital are gonna be great buddies.

My doctor kept asking about my eats and if I ate red meat or any meat at all. I told her I was more vegan/vegetarian with maybe some seafood and occasional chicken… It’s strange, while I eat it, I no longer ever crave it so I mainly eat vegan/vegetarian. I’ll still eat meat I just don’t go out of my way to cook it or get any of it unless I’m sharing with other people. I’m a big seafood lover tho. Shrimp, Clams, Fish, Squid, Crabs, Lobster :] But even those I rarely eat anymore… @_@

Breakfast/Lunch was a giant bowl and a half of barley w/ 綠豆 (green beans) & dried and rehydrated longans (I refer to them as two different names… 龍眼 and Taiwanese people generally refer to them as 桂圓)

& of course my vitamins & gummy vites!!!!!

I came home with a list of things and their iron quantities… chocolate & dried peaches were on the list of things with pretty good amounts of iron *snicker* so I had a chocolate covered orange slice and dried peach!!!

I’m getting ready for dinner right now… I’m planning some Orange Cumin Shrimp w/ Tomatillas… Leeks & Chanterelles and some Spaghetti Squash and Roasted Delicatas!!! Everything I’m making seems so yummie but I’m daydreaming about a nice big bowl of BANANA OATS w/ BLUEBERRIES… I think my mom might yell at me tho since it’s not really overflowing with iron @_@ BUT it’s what I CRAVE :[

The shrimps before I tossed it all together with the wilting fresh basil, and tomatillo/hot pepper/spinach/grilled scallions mixture

(I had marinated the shrimps for about an hour with fresh orange zest & juice, garlic, pepper, wine, paprika & cumin!!!.. I think a few other spices too but I don’t remember hahaha)

Hahaha… the most fanciful & untypical thing a guy has ever made me was paella… but I usually end up doing all the cooking LOL… I only had one boyfriend who enjoyed cooking almost as much as I did tho, so I think we influenced each other a lot in that sense while we were together.

Sidenote: Today’s sunny with high of 68 degrees :D ECSTATIC!!!

I woke up feeling really sick yesterday morning…. so I had some water & vitamins, my chia seeds and was out the door…

Trader Joe’s had human bingo yesterday while I was shopping and I got THREE things!!!! Some chocolate decadance cereal, apple/grape juice & a tub of chocolate covered almonds :D Yay for free!!! It was fun too… you’re supposed to scream BINGO when they call your number and I was the only one who actually screamed it (aside from the 5 year old who also won once) … >_<; I’m a dork!!!

I got some dried pomelo at TJ’s so I had three pieces, they’re bitter and yummy!!!

There was no skin on it tho… dried fruit skin is the best!!! I still prefer the Russo’s kind that’s just dried skin with a tiny piece of meat, these are less sweet tho…!!!

Some other more interesting things I bought…

& then at Whole Foods I was deciding on Arrowhead Mills’ 4 Grain or 7 Grain Hot Cereal to try.. I decided that I’d go for simple first :] Plus the 4 Grain looked thicker and chewier on the box :] Haha… but this one has flax in it, I’m hesitant since the last time I tried flax I seemed allergic but this was too tempting not to buy :D

I made a quick trip to B&N to look for some books and to get my coffee fix and then ended up being STARVED whilst browsing. Feeling faint, I was SO happy I remembered to pack a cup of GoLean in my bag :D

I added a new kind of squash to try this wk :D It says it’s chestnutty, so I’m excited!!! I’ll probably try it tonite!!!

I decided to try a mixture of flavors I saw in a cooking mag once… I got STARVING suddenly right when I was preparing dinner so I had the last 2 tiny mini Honeycrisps to prevent munching on dinner before I finished!!! :]

DINNER would be… Chicken Thighs w/….

Honey Butter Pears…
 

Leeks… (I was ecstatic when I found these, usually I prefer buying them fresh and trimming them my own, but I’m sick so screw you :P)
 

I added some toasted walnuts and mushrooms on top :D

Secret ingredients: I placed a slice of pancetta underneath each chicken thigh AND had red currant jelly in it :D

I figured I needed a veggie sidedish so… simple & quick:
Curried Orange Cauliflower… I bought a tiny orange thing… added curry and some other spices to it and chopped up some dried cherries… spicy and sweet!!!
 

Since I still felt crummy I whipped up a huge bowl of pumpkin oatmeal w/ wheatberries & a whopping a tbs of lowfat coconut flakes :D Only 35 cal a tbs :D It wasn’t overly pumpkiny.. I guess I need more than 1/2c of pumpkin to 1/2 of oats?!?!..

The coconut lasted me til the very end!!!

Next time I’m gonna toast them first tho…

I decided to go old school last nite and watch Halloween (can you believe I’ve watched them all except for this one???? The OG???? I even saw the remake last year but not this one…. oy)

Even Dior’s ready for movie time (and I bet she was daydreaming about ‘Apple Time’ here too..)

I ended up eating 1.5 persimmons (sooo yum)

A HUUUUGE glass of wine (so I didn’t have to get up to pour more)

(I ended up filling it almost to the top haha but it looks prettier & classier partway filled)

& a tub of sour worms from WF… I didn’t mean to but they were so chewy :]

At least they’re a bit “healthier” cuz they’re made from fruit juices?!?!.. hahaha…

Some books/mags I bought today, thought it was funny cuz it was so random:

I guess all that food, worms and wine caught up with me cuz while I’m still feeling crummy I’m also feeling stuffed. I had a weird nite (but better than previous) I think the wine helped me sleep a little better actually. WEIIIIIIIRD dreams tho about me living in a super strict boarding school and such. @_@ The new head that came in was super strict (as opposed the previous lax one who just let us turn it into a party school) … and the new head didn’t like me and locked me in the gym with no electricity and my boyfriend w/ the help of our friends (in my dream) was trying to sneak me out.

I also had another WEIRD dream also about me trying to run away from this psycho guy… strange.

Is my dreams trying to tell me something about me needing to get away?!?!.. hahaha…

So I was gonna wake up early to make brunch for everyone.. but now… I duno. I wanted to make french toast, eggs, bacon, the works.. but now.. maybe something simple.. Just one thing.. hahahah… or oatmeal for all :D
