Vegetarian No Meat Burgers!!!… and other yummies from the past few days!

Today I tried something new… while I had a beef burger…. oh so yummy, I tried out a special recipe for my mom and her vegetarian friend…. no-meat burgers for them using Beyond Meat product! I prefer Yves non-meats but couldn’t find any at Whole Foods today :[ Bummer.

For 2 Burger Patties:
1 bag of Beyond Beef Beefy Crumbles

1/4-1/2 onion
A few cloves of garlic
Paprika
Salt
Black Pepper
Dried Basil (fresh is probably better and if so, minced)
2 eggs
flour

I first sautéed the minced onion and garlic til caramelized and starting to be transparent and browned slightly. I mixed it with the beefy crumbles. Added S&P, paprika, dried basil and perhaps a few more secret ingredients. I added two eggs and a few pinches of flour to help it bind better – I probably should have added more flour since it was a little too wet. And I grilled them.

For toppings I sautéed onions and mushrooms. Topped the patties with cheese as they were about to be done cooking and put a lid on the pan to melt the cheese. I added a few slices of rings of red onion, sliced tomatoes and some avocado. Some other options (which I put on my beef burger) were jalapeños and cilantro.

And to make the dinner even better.. some kale chips… just kale… drizzled in evoo, s&p I added cayenne pepper… or whatever flavorings you want :]

Sorry, being “healthy”… even tho the burger was rare *MAD COW DISEASE* haha but I ate my in lettuce wrap….”sort of” ok some of it with fork and knife….

More stuff I made this weekend..

Vegetarian Soup… there’s kale, corn, leeks, mushrooms, onion etc etc… topped with some cheese and cilantro and a “garlic bread” croissant

There were more veggies but I don’t remember

Duck Confit with Leek/Mushroom Risotto and Spicy Broccoli

Just used a tiny bit of white truffle butter, topped with parm and scallions in the risotto, had fresh white truffles.. but forgot to top it… duck confit cooked in lots of duck fat for awhile so super crispy… and then just steamed broccoli with hot pepper flakes :]

Today…… and last week’s breakfast

I had the most shitty day.

And then I had the best ending to the night…. my bf gave me frownies that looked so cartoonish and comical… I couldn’t stop giggling… I fell over in giggles……

It’s insane and ridic to explain the whole thing that happened tonight… today…. yesterday…. but ok I admit it’s been a shitty few days since my crash.  I’m still not done figuring out my insurance/police reports and my anxiety/panic attack medication……. my psychiatrist is on VACA. WTF. Part of the reason I had the crash WAS cuz of it, I’m sure.

BUT… I wanna say, I got a lot of stuff done the past two days… and I had full support from friends and mostly my wonderful bf J.

The next morning J made me food… I helped with peeling bacon and mixing eggs…

So much bacon and so much bacon fat….. we fried the WHOLE packet!!!!!!

And then we scrambled like 8 eggs in the bacon fat…. just added some pepper to it… thiS WAS AMAZING…

Obviously I made the mimosas and some black coffee… and we had fresh pineapple to gnaw on…..

After a long day of fooding… bloat bloat, we woke up early to go to the airport to fly in opposite directions. W back to Detroit and me back to Boston.

I’m ready… iPad, Mags, Chicken Caesar, Coffee.. and I had a bag of snacks, hot fries and candy  and fruits.

I got home and had to do some work.. so I had some freshly picked HUGE blueberries while blogging, uploading videos, pics and doing work. I’m good at multi-tasking :]

For dinner, Mommy made 4 delicious spicy dishes that I love.

Pizza Night

After sleeping in and having a late lunch of Vietnamese food at Le’s…and I mean late… 2/3ish [yumm pho and DIY Shrimp Summer Rolls…] along with..

COMPLETELY STUFFED and FOOD COMA’D BEYOND BELIEF… We shopped around Copley for a bit, I ended up not wanting anything but Williams Sonoma stuff hahaha. Figures. I’m so not into the clothes this season…. food never goes out of style ;D White Honey, Crepe Cookies and Red Licorice Candy :] NOM!  We weren’t hungry but still we were going out that night and had to think of what to eat…. We decided to make our own food…

We were in the mood for lobsters… we keep ordering subpar lobster t restaurants… but somehow ended up with the idea of making our own pizzas. We debated on whether to try Trader Joe’s dough or Whole Foods, but ultimately decided that Whole Foods had fresher produce….

We bought mozzerella, pizza sauce, fresh pizza dough, yellow onion, basil, and spicy pork sausage. We also headed next door for some good beer [Estrella Inedit, Banana Bread Beer] and some nice Red Wine! :]

Z was in charge of the dough..

And I was in charge of the sausage/onion pizza… We were making two mini pizzas.. a sausage/onion and an OG margherita pizza.

ISN’T IT CUTE? We bought the SMALLEST yellow onion we could find to go with our sausage pizza :D Isn’t it cute?!?!?!.. we put half raw and half sauteed caramelized onions with the sausage pizza

We add the basil in after 8 or 9 minutes and cook it for about a minute and it’s done. We sprinkle it with a drizzle of EVOO and bam.. delicious!!!

Wine and Beer.. best of both worlds

Our Margherita Pizza… :D Nom nom… there was supposed to be more cheese.. BUUTTTT… SOMEEEEEEBODY was eating the mozzarella with the fresh basil :] I’m not gonna say any names.. but his name starts with a Z… I’m guilty too tho he fed me a bite :]

These two pizzas were delicious. We made them super fast and ate them all within an hour. We were heading out to DOWN ULTRA LOUNGE that night so we had to hurry. We also knew we had to eat something [and something carb-y] This was delicious and we’re STILL craving it. Z bought a pizza stone last night so we’re planning on making pizzas again later on this week!!! YAY
