Pumpkin Pecan Turkey Breast w/ Cranberry Shallot Sauce

Serves: 2

2 Turkey Breasts
2 tbs Wheatgerm
1.5 tbs Pumpkin Puree
1/3c Pumpkin Pecan Butter
Cinnamon
Nutmeg
Cayenne
White Wine
1 Large Shallot (1/2 diced, 1/2 sliced)
1 tbs EVOO 
1/4c Cranberries
S+P 
1/3-1/2c Toased Pumpkin Seeds (however much you want, if at all, is fine) 

1. Preheat oven to 350 Degrees.
2. Sprinkle S+P, Cinnamon, Nutmeg, Cayenne on the Turkey Breasts.
3. Mix together the Pumpkin and about 3 tbs of the Pumpkin Pecan Butter in a small bowl and smother over one side of the turkey breasts.

4. Preheat pan with EVOO and add in 1/2 of the shallot (diced)
5. While that starts to sizzle and cook, sprinkle the wheatgerm on the turkey (over the pumpkin spread) and add the turkey breasts (pumpkin down) into the pan.

6. While that side browns sprinkle S+P, Cinnamon & Nutmeg on the other side.
7. In a small baking pan add in 1/2 of the shallot (sliced), the cranberries, about 2 tbs wine and the rest of the pumpkin pecan butter onto the bottom.

8. After that side is browned and crisp, turn it over to brown the other side.
9. When both sides are brown and crispy, put them into the pan (pumpkin side up) and cover it with foil. Pop it into the oven for about 15-20 min.
10. When done, take out, plate, drizzle the cranberry/shallot sauce in the pan and sprinkle with toasted pumpkin seeds!!!

I served it with some steamed broccoli & my cranberry, spinach quinoa. :D

Butternut Apple Walnut Muffins

20 oz Butternut Squash (finely diced and mashed)
1 1/4c Brown Sugar
4 Large Eggs
1/2 Granny Smith Apple (peeled, diced)
Pinch of Salt
2 1/2c Whole Wheat Flour
2tsp Baking Powder
1tsp Cinnamon
3/4 Apple Sauce
2/3c Chopped Walnuts

1. Preheat oven to 350 degrees & line a muffin pan with muffin cups.
 

2. Peel and dice and roughly mash up the butternut squash.

3. Add in the 1 1/4c of Brown Sugar (you can add more if you want it sweeter) and the 4 large eggs.
 

4. Mix thoroughly. And then chop and peel and add in the granny smith apple.

5. Mix thoroughly. Add in salt, flour, baking powder, apple sauce, cinnamon & walnuts.

6. Use an ice cream scoop and scoop them into muffin cups so it’s almost at the top.
 

Makes about 20 muffins! Bake about 20-25 min

and the other batch I topped it with cranberry sauce (1/2c cranberries, 1/2c water, boiled down)

Super Grainy Day…

I woke up later than anticipated but managed to make a quick brunch for me and the parents anyways. It was GORGEOUS out today so I wanted to get out early to enjoy it.

I whipped up a batch of Ezekiel french toast using egg whites, vanilla hemp milk, mexican vanilla & cinnamon.

Delicious vanillas!!

In the process….

I made 8, & they were devoured SOO fast!!!

See that shadow? That was my dad’s hand coming down to take the last two pieces.. haha…

I also made myself some (1/4c) 4-Grain Hot Cereal (w/ Flax)

& I added 1/2c of cranberries and 1/4c of wheatberries!!

I loved it, so tart and fresh and tasty!!!

After a bite or two I realized I hadn’t eaten my chia seeds yet, sooo…

At first I was sad cuz it didn’t seem as much as my usual oatmeal but it was SOOO filling by the time I was done….

It didn’t help that I also had 2 persimmons afterwards, I wasn’t even hungry but they were SOOOO tasty!!!

I went to the mall to pick up some Victoria’s Secret, Sephora, & a pretty ring from Swavroski… & thennnnnn, two apples from Rocky Mountain :]

Decided to cook off my wheatberries for the week.. and while doing so I prepped some Delicata squash for lunch tomorrow!!

My mom made this Barley, Jujube, Wild Rice, some other grains and I added my own fresh 1/4c of Wheatberries!!!

Watched Primal Fear tonite (LOOOOVE Ed Nortan and I’ve seen most of his movies but not this one yet)… SUCH A FREAKING GOOD MOVIE!!!! RENT IT/BUY IT NOW!!!! Ed ♥ ♥

& then it was APPLE TIME, for me & Dior

Despite having no real appetite today, my FRESHLY made caramel apple was delicious!!!

I like it chopped up into smaller pieces so I enjoy it longer….

I just painted my nails BROWNIE (hehe) and I’m catching up on some work right now.. probably go to bed in an hour or two after I get this stuff done!!! Nite* See ya’ll tomorrow morning :D
