Now onwards to the more, “boring” stuff… haha…
I’ve been craving some sort of chili for AGES SOOOOOOO… since I bought TONS of beans this wkend… :] (365 Brand, Prepared Beans… Unsalted!!! from Whole Foods) I decided to use a few cans up!!!
The result??? Tiffie Chili!!!!

First I made the base…
- ~3 or 4 cups of Homemade chicken stock.. maybe more?! I didn’t measure :]
- 1 Canned Tomatoes
- 4 Carrots (varied colors)
- 2 Celery
- 2 LARGE Shallots
- 1/4 Red Kuri Squash (w/ skin on)
After it was all tender I pureed it til it had bits in the smoothhhhh thick soup!!! I added flavorings of cinnamon, nutmeg, paprika, hot pepper flakes, course black pepper… Errrr… some other secret ingredients :]
Then I added the beannnns…
- 1 can (~ 1.5c) Garbanzo Beans
- 1 can (~1.5c) Red Kidney Beans
Stirred it in and then added the GREEEENS of choice…
- Thinly sliced Leek (big huge huge huge one)
Stirred and served… the longer you keep it warm the softer and more cooked the leeks are, I like them still crunchy :]
I also steamed the rest of my kale <3 YUM, to finish off…

Num num num!!! I’m SOOO in love with STEAMED kale now.. I used to love it just quickly sauteed with garlic and a little oil… but I realized how tender and sweet it gets steamed :]

I topped my chili on top of it!! With extra hot pepper flakes <3

And then I had to look for my spoon, which was hiding :]

I had some more…

THIS CHILI WAS CRAZYYYYYYYYYYYYYYY

(I still duno why my iPhone randomly does that but it’s kinda cool haha)
And another bowl…

Baked Red Kuri Wedges

They were creamy, sweet and VERY chestnut like :] They’re very similar to the kabocha but less dry :]
And another bowl.. I started dipping my squash in it since it was so thick it was llike my bread :]

I had so many bowls… 4? 5? I lost count.. I was stuffed… BUTTTTTTTTTTTTTT obviously I ate more…
ANYWAYS I’ve decided that next time, I shouldn’t eat and watch the election on the news.. I ended up eating tons of Chocolates…

Almond Pocky

& Coconut Pocky
[ unpictured cuz it was devoured too fast!!! ]
Fruit Time was…. Longans + Rambutans

The Rambutans

The Longans

Peeled :]

I ended up eating…. 22 Rambutans and 45 Longans :D YUM!
*yawn* I’m sleepy now.. but I have some work to get done… I’m SOOO happy Obama won :D YAY!!!
